Baked Cheesy Caldereta

Kaldereta or caldereta is a goat meat stew from the Philippines. Variations of the dish use beef, chicken, or pork. Commonly, the goat meat is stewed with vegetables and liver paste. Vegetables may include tomatoes, potatoes, olives, bell peppers, and hot peppers. Kaldereta sometimes includes tomato sauce. Source

Ingredients

  • 1/2 cup grated cheese
  • 2 tbsp of oil
  • 3 cloves of garlic minced
  • 1 small onion minced
  • 1/2 kg of pork meat
  • 1 tbsp fish sauce
  • 1 tsp vetsin (optional)
  • 1 tsp black pepper
  • bayleaf
  • 2 pcs carrots cubed
  • 2 pcs potatoes cubed
  • 1 can of liver spread
  • 250 ml tomato sauce
  • 125 ml Alaska creamy evap or milk
  • 1 cup of water
  • 1 bell pepper cubed

Directions

  • Saute garlic and onions
  • Add the pork meat
  • When it turned brown, add 1 cup of water and cook for 30 mins
  • Season with fish sauce, vetsin and black pepper
  • Add bay leaf
  • After 2 minutes, add the carrot, potatoes, liver spread and tomato sauce
  • Mix everything well then add the creamy evap and water
  • Add the bell pepper and cook until the sauce is reduced
  • Transfer into baking pan and top with cheese
  • Bake until the cheese is melted
